Farro Rainbow Salad with Miso Dressing
If I have learned anything in my decades using food blogs for recipes, it is that most people want to see the recipe in the beginning of the post and couldn't care less about the author's story leading to making the dish (except for maybe my mother - HI!). So, I'm going rogue and will explain myself better after the recipe. Feel free to stick around and read or move on. Either way, I hope you enjoy this salad. It got eight thumbs up in this house!
Farro Rainbow Salad with Miso Dressing
Pre/Cook time: 30 minutes
Makes 4-6 servings
Farro, 1 cup dry
Black beans, 1 can (no salt added, if possible)
Frozen corn, 1 bag or fresh corn, 1-2 cups
Red Pepper, cut into small pieces
Frozen peas, 1 bag
Any other veggies in the house, including edamame (shelled), green, orange, or yellow peppers, grape tomatoes, halved, broccoli florets, chopped kale or other greens, or even diced cucumber
2 Tbs yellow or white miso
2 tsp grated fresh ginger
2 Tbs pure maple syrup (not pancake syrup!)
1 Tbs rice vinegar
3 Tbs water
Prepare the farro according to the package directions (usually boiling in water for 30 minutes and then drain like pasta). Prepare veggies by microwaving the frozen ones and/or chopping the others. Combine the last 5 ingredients for the *miso dressing in a small bowl and whisk. Combine cooked farro and veggies in a large bowl and mix with miso dressing. Enjoy!

I am in NO WAY a trained chef or even a skilled cook. Most of my recipes are from other sources that I will link to somewhere in the recipe. If I forget, please let me know and I will update! This dish is something my kids love that I throw together when I'm out of ideas and energy. It's also a great example of how easy it is to eat a WFPBNO diet--a green, a grain, and a bean and then expand from there.
