Easy No Oil Hummus
If you're looking for an easy, but delicious no oil or tahini classic hummus recipe, I've got you covered. This is inspired by The Engine 2 Cookbook, but I add a little more cumin to mine (because I'm not sure there can ever be enough cumin!) and play with the texture each time. The picture above shows a chunkier version (which is great as a spread), but with just a tablespoon or more of water and another spin in the blender you can get it smoother and more 'dip-like.'Ingredients:
2 cans chickpeas (no salt added, if possible)
2 cloves of garlic or 2 tsp of minced garlic
2 Tbs of lemon juice
2 tsp of mustard (any kind! I usually use spicy brown because we always have that on hand)
1 tsp low sodium soy sauce or tamari
1 tsp ground cumin
1/2 tsp turmeric
2 tsp or more of water
Add all ingredients into a high speed blender or food processor and blend until desired consistency. Enjoy!
